Chaos Serpents look nasty but they are actually relatively easy to take out with range fire. The are move a lot form side to side which makes there progression towards you really slow. Their ranged fire is nasty, but with all their gadding about they don't get to fire that muchj before you kill them; either by getting stuck in or in the case of Daedolon with ranged fire. The main problem comes later in the game when they start appearing in large groups. They come in two varieties Green fireball firing serpents or Brown poison firing ones.
